Quintana Roo, Mexico — Strengthening the gastronomy sector in Quintana Roo hinges on boosting the value chain linked to primary production, connecting local farmers with chefs in tourist destinations. Andrés Aguilar Becerril, Undersecretary of Planning and Tourism Development for the state’s Tourism Secretariat, emphasized this approach as a response to challenges in production and commercialization. Programs by the Institute of Social and Solidarity Economy (Iessol) are creating solutions that benefit the entire supply chain.
Collection Centers and Organic Farms: Key to Local Growth
One of the most significant advancements is the establishment of collection centers and the development of organic farms, enabling local products to reach restaurants and hotels more efficiently. Bacalar has pioneered this connection model by forging direct links between farmers, chefs, and the community. This success story is now being considered for replication in other municipalities across the state.
Plans are also underway to install two additional collection centers dedicated to key products such as citrus fruits (lemons and oranges) and pineapples, further strengthening the local production base.
Concrete Progress in Gastronomy Promotion Strategy
The Strategy for the Promotion of State Gastronomy is advancing steadily, with 33% of its planned actions already completed. Among its most notable achievements is the international promotion of local cuisine, featuring traditional cooks at high-profile forums, including:
- The International Tourism Fair (Fitur)
- The Tianguis Turístico
- A special presentation at the Vatican
These efforts have positioned Quintana Roo as a global reference for culturally rooted cuisine.
Culinary Experience: Tourism and Flavor in One Initiative
Additionally, the "Culinary Experience" strategy, led by the Quintana Roo Tourism Promotion Council, aims to establish gastronomy as a standalone tourist attraction. The program integrates local culinary experiences with destination promotion, offering visitors more than just paradisiacal landscapes—authentic flavors, living culture, and a connection to regional roots.
