Yucatán, Mexico — The fishing sector of Yucatán is working to obtain an international certification for the Mayan octopus, with the purpose of adding value and improving its positioning in international markets, according to Enrique Sánchez Sánchez, president of the National Chamber of the Fishing and Aquaculture Industry (Canainpesca).

"The international certification being sought for the Mayan octopus is being pursued through a fishery improvement project. This will give the Mayan octopus added value in international markets, both in the United States and in Europe, primarily in the United States," explained the industry leader.

Sánchez Sánchez highlighted that the Yucatecan octopus has been gaining ground in American cuisine, where it has become a fashionable product. "American cuisine has been incorporating it more and more each year into restaurants and for the final consumer. We began this project a year ago and we hope to have a conclusion by next year. Obviously, this will give a plus for export," he stated.

The fishing industry representative indicated that the certification process involves a series of studies and scientific evaluations that guarantee the traceability and sustainability of the fishery.
