Mérida to Host 2026 Mucbipollo Festival at San Sebastián Park

Traditional Yucatecan mucbipollo, or pib, prepared for the Hanal Pixán season in Mérida

Mérida, Yucatán — Mérida is preparing for one of the most anticipated culinary celebrations of the Hanal Pixán season. On Sunday, October 25, 2026, San Sebastián Park will host the Feria del Mucbipollo 2026, where residents and visitors can sample one of the signature dishes of Yucatecan cuisine.

The event will run from 8:00 a.m. to 8:00 p.m. as part of the Festival de las Ánimas, a day dedicated to the flavors and traditions of Yucatán.

What Is the Mucbipollo?

The mucbipollo, popularly known as pib, is one of Yucatán’s traditional dishes and plays a central role during Hanal Pixán, the celebration that honors the faithful departed.

The dish is made from corn dough and filled with meat — mainly chicken and pork — along with ingredients such as recado and espelón beans.

Its defining feature is its underground cooking method, also called pib, a traditional technique that gives the dish its distinctive flavor and aroma.

During the 2026 festival, attendees will be able to learn about the tradition up close through a demonstration of the buried pib process, from preparation through cooking.

When and Where

The Feria del Mucbipollo 2026 will take place on Sunday, October 25 at San Sebastián Park in Mérida. Activities begin at 8:00 a.m. and continue until 8:00 p.m., giving visitors several hours to stop by and taste the traditional dish.

The event is part of the Festival de las Ánimas, so in addition to the food offerings it will tie into activities aimed at preserving and promoting traditions linked to Hanal Pixán.

Vendors will sell the traditional pib throughout the day, and one of the main draws will be the demonstration of the underground cooking process, an ancestral practice of Yucatecan gastronomy.

How Much Will Mucbipollo Cost?

For this edition, a tub of mucbipollo is expected to cost between 800 and 900 pesos, while an individual portion will run about 100 pesos.

Prices are estimates and may vary depending on the vendor and the size of the preparation, so organizers recommend keeping those figures in mind before heading to the fair.
