Mérida, Yucatán — With the support of the State Ministry of Tourism (Sefotur), twelve cooks from various municipalities in Yucatán have obtained the EC 1084 certification, which officially validates their knowledge of traditional cuisine and opens new opportunities for professional development.
According to an official press release, the EC 1084 standard was developed by the Conservatorio Cultural Gastronómico Mexicano (CCGM) in coordination with the Consejo Nacional de Normalización y Certificación de Competencias Laborales (Conocer). It formally validates the competencies acquired throughout a lifetime in the preparation of dishes from popular and traditional Mexican cuisine.
Thanks to this certification, the cooks receive an official document from the Mexican state that endorses their knowledge and opens doors in the professional sphere, granting them greater recognition and tools to access new markets.
The certification process was conducted over two sessions held at the tourist rest stop in Yaxunah, in the municipality of Yaxcabá. The sessions included an alignment course for the standard and a final evaluation practice.
Twelve representatives from different municipalities in Yucatán participated:
- From Santa Elena: Elda María Lozano Itzá and Gladys Concepción Collí Ek
- From Valladolid: Eulalia Moo Poot, Leonila Tun y Noh, Lucila Poot Chay, and Martha Fernanda Mex Chan
- From Yaxcabá: Holga Marleni Tamay Canul, Pat Moo Yanely, Juana de la Cruz Mex Ucan, María Dominga Tuz Padilla, Jafet Obed Tec Canul, and María Margarita Canul Uicab.
The participants received training and were evaluated on their knowledge, performance, attitudes, values, and habits under the guidance of instructors from the CCGM: chefs Beatriz Compeán Villa, Fanny Elizabeth Cruz Ponce de León, Abel Hernández López, and Sheila Natalia Moreno Hernández.
