Cancún — Amigos de Sian Ka’an, in collaboration with Slow Food International and the Sian Ka’an Biosphere Reserve, has issued a call to the chefs of the communities of Sian Ka’an and Maya Ka’an. The objective is to compile their culinary knowledge to create the "Recetario del Baluarte Slow Food de la Langosta Espinosa" (Slow Food Presidium Spiny Lobster Recipe Book).
This initiative, supported by the European Union in Mexico, is open to all individuals who prepare traditional dishes using spiny lobster or other local ingredients, whether from their homes, cooperatives, or community groups. The deadline to submit recipes is November 20.

This recipe book is an integral part of the actions under the project "Acciones productivas para la sustentabilidad turística en Maya Ka’an como medio de adaptación climática" (Productive Actions for Tourism Sustainability in Maya Ka’an as a Means of Climate Adaptation), a strategy financed by the European Union in Mexico.
The collaboration with Slow Food International seeks to highlight and preserve the region's gastronomic richness and biodiversity, reinforcing the cultural value of local foods.
